Muffin Makeover


Muffins are So Delicious Any Time of Day

I especially love mine with a cup of coffee in the morning. They also make the perfect afternoon snack.  There are so many different muffin variations so there’s something for everyone.

Tonight I wanted to use up some older produce so I whipped up a batch of zucchini/carrot/apple muffins and tweaked the following recipe a little:

1.) Brown rice flour instead of white flour
2.) Tablespoon of stevia instead of white sugar
3.) Used a reduced combination of butter and coconut oil
4.) Used two eggs instead of three (noticed my muffins were a little dry so maybe that’s why).  If you’re vegan, EggReplacer works great. Here is a great vegan banana muffin recipe and you can omit the banana and add your favorite fruit.

Vegan, gluten-free, sugar-free, etc. Regardless of your dietary restrictions or preferences, you can find the perfect recipe to satisfy your muffin cravings. When you’re trying recipes, it might help to taste test the batter to make sure it’s to your liking. I don’t like overly sweet muffins so I tend to use less honey or stevia when I bake. Your preferences might be different!

Most of these only take 20-25 minutes to bake. Muffin pans, drying racks and cupcake liners will all save you time and are worth investing in.
