I am in love with Trader Joe’s Roasted Red Pepper Hummus. It’s got a fabulous chipotle flavor with a nice hot kick. The texture is perfect and it’s delicious as an appetizer with tamari rice chips, toast or whole grain crackers. Although it’s pretty reasonably priced, I enjoy a homemade version from time to time. There are a few recipes I found online; trial & error narrowed it down to this one:
Hummus is pretty easy to make in a Vitamix or food processor. You can make large batches of your favorite recipe and freeze what you want to use later. It’s loaded with protein so it fills you up.
