A Quick & Easy Vegan Dish

Vegetable Medley

One of my favorite quick meals involves ½ dozen different veggies, salt/pepper, olive oil and cilantro.  Super easy! Here’s how to make it:

Using a veggie chopper, chop up the following:

  1. Two onions
  2. Several celery stalks
  3. One carrot
  4. Two green zucchini (peeled)
  5. One roma tomato
  6. Handful of cilantro

I like to chop my veggies fine but it’s totally up to you based on your preference. I use a large sauté pan to cook everything except the tomato and cilantro, which I add last. I add 2-3 TBL of olive oil, salt & pepper to the veggies and then cook everything on medium heat for about 15 minutes. At this point, I add the chopped tomato and a handful of chopped cilantro to taste. Cook for another 5 minutes or so (or longer, if you prefer) and you’ve got a delicious and healthy dinner or side dish. If you’re looking to feed a family or larger group, just double the recipe.

Tips/Variations

  • Serve with your favorite rice or quinoa for more depth.
  • Not a vegan or vegetarian? You could easily cook chicken breast and add to this dish.
