5-Minute Vegan Lunch

Looking for a quick, healthy lunch that you can prepare in just 5 minutes?  Try an edamame bowl. Here’s how to do it:

  • Prepare 1 bag of edamame (I buy Trader Joe’s frozen edamame) and cook for 5 minutes.
  • Add tamari (or soy sauce) to the cooked, cooled edamame.
  • Sprinke sesame seeds on top.

You’re done! It’s really that easy and this meatless lunch will fill you up, without weighing you down in the afternoon when you need your energy.  The frozen edamame takes about 5 minutes to cook, so you can use this time to get everything else ready.  When cooked, I drain & rinse in cold water so I can immediately put it in a container and take to work. It’s high in protein, low-glycemic, vegan and really yummy.
