- 2-4 pieces of Cod or Tilapia (pan grilled or you can use a George Foreman Grill, etc.)
- Old Bay seasoning
- Salt & pepper
- Non-stick cooking spray
- Fresh lemon
Cook fish on medium heat for 5-7 minutes (or until flakes easily with fork).
Vegetable Side Dish
Chop up onion, carrot, celery, garlic, cilantro and squash. I vary the amount of vegetables depending upon the portion size that I desire. Cook on medium-high heat with 1-2 TBL olive oil for 15 minutes, or until cooked. Add cilantro (optional) and season with salt/pepper.
