Easy Vegan Side Dishes – Delicious & Nutritious

With total prep time of 10 minutes or less, these two veggie side dishes may just become your new favorites.  You’ll need five simple ingredients:

  1. Sweet potatoes
  2. Brussel Sprouts (trust me, these are damn good baked with a little salt/pepper/olive oil)
  3. Sea Salt
  4. Olive Oil
  5. Black Pepper

Preheat oven to 350 degrees; while oven is heating, rinse #1 and #2.  Coat two baking dishes with cooking spray or olive oil.  Peel the potatoes and cut off the ends of the sprouts.  Chop both the potatoes & sprouts into bite sized pieces, add 1-2TBL olive oil, dash of sea salt & pepper and place in separate oven-proof baking dishes.  Bake for 15 minutes, then stir.  Bake for another 30-40 minutes or until tender & slightly crispy.  Enjoy!
