Finding the perfect vegan recipe is simple; there are so many fantastic cookbooks available these days. One of my favorites is Veganomicon, which is loaded with almost 300 pages of mouth-watering vegan recipes. Plus, the book itself is just gorgeous. 🙂 If you don’t want to make the commitment to buy a bunch of cookbooks, the library is always a great option.
I definitely have my go-to meal favorites, but when I crave something different and have the time to actually prepare it, vegan cookbooks help guide me. Once you stock your kitchen with basic herbs, spices, oils and bulk items, you can pull together a delicious and healthy veggie meal pretty quickly. Having the right kitchen tools helps save time as well.
When temperatures heat up, salads can be such a refreshing lunch or dinner choice. However, making them really satisfying can be a challenge when you’re vegetarian or vegan. Check out salad recipes online for inspiration. You can use any of these add-ins to increase your protein intake and help you stay full longer: cooked soybeans (A.K.A. edamame), sunflower seeds, pumpkin seeds, cooked quinoa, cooked tofu or chickpeas. I’m not a fan of store-bought dressing and love to make my own. It’s so easy and taste better. My favorite is: olive oil, lemon juice, sea salt and pepper.
