Now that I’ve got your attention, let’s get down to business! What I’m talking about here are good ol’ watermelons, which will do amazing things for your body. They’re about 90% water and contain many essential nutrients. They’re in season on the east coast and aren’t hard to find. Watermelons are loaded with vitamins A & C and they’re especially healthy for men as they support prostate health. They’re also excellent to eat after a workout since they’re so hydrating and they also help relieve muscle soreness.
But wait, there’s more . . .
Did you know that watermelon has the highest amount of lycopene of any fruit or vegetable? I’ve always thought tomatoes were the lycopene winner so this surprised me. What’s the big deal with Lycopene? It’s incredibly powerful; it can reduce the risk of cancer and is an immune booster. Eat those juicy melons!
They’re perfect to add to salads, smoothies, fresh juices and much more. Here are 5 watermelon recipes you will love and they’re all vegan or vegetarian.
- Watermelon/Tomato Salad (you an easily make this vegan by omitting the feta)
- Watermelon Salsa
- Watermelon/Strawberry Smoothie (I omit the nut milk & replace the honey with stevia)
- Watermelon Mint Cooler (I use fresh lemon juice from 1-2 lemons + stevia instead of traditional “lemonade.”)
- Watermelon Salad with Basil and Goat Cheese (again, you can make vegan by omitting the cheese in this recipe)
