Vegan Split Pea Soup: Crock Pot Option

IMG_5891Split peas are an excellent (non-animal) protein source.  I’ve recently fallen in love with them!  They’re cheap (buy in the bulk aisle at your favorite health food store or online) and super healthy, since they contain protein and fiber and help manage blood sugar. Split pea soup looks nasty!  But, just trust me when I tell you it’s sooo tasty and filling.  Pairs beautifully with a slice or two of crusty whole grain bread and organic butter (or earth balance, if you’re vegan).  I just made this earlier in the week, right in my crock pot.  I cooked on high for a few hours and it was ready by suppertime.  If you’re leaving it home add day to cook in the crock pot, definitely cook on low.

Here’s a great recipe; if you want something simpler, omit the following:  parsley, potatoes, carrots, onion and reduce water accordingly so it’s not too soupy.   It’ll still taste great 🙂  You want the texture to be on the thick side.
